Non-Alcoholic Refreshing Summer Raspberry Cocktail Inspired by the Classic Clover Club

Raspberry Fizz

  • 2oz pinot noir juice

  • 1oz verjus

  • .5oz raspberry gum syrup

  • 1 tsp juniper infusion*

  • cold club soda

Never underestimate the power of verjus in a refreshing beverage.

This zero-proof drink balances cheek-puckering acidity with the lusciousness of gum arabic. Make your own if you’re super ambitious but using a bottle from Small Hands Foods is a smart play. This drink also features two well-made products from the same craft producer in Anderson Valley, Navarro Vineyards. Their verjus, made from Chardonnay grapes, is deliciously tart, fruity and almost floral. The Pinot Noir juice is an amazing item to have in the fridge for upgraded drink options. If you can’t track this down, buy the best, least sweet grape juice you can find at a specialty grocer.

*juniper infusion

The Dry Soda brand used to make a really great juniper soda. In it’s place you can make a full-flavored juniper infusion with some of the verjus you now have on hand.

  • 1/2 cup juniper berries

  • 2 cups verjus

  • Vacuum seal and place in a pot of water set @135-140* on an induction burner.

  • Let steep for an hour.

  • After, drop in an ice bath to cool.

  • Open bag and fine strain the liquid.

  • Store in dasher or dropper bottle with remainder in refrigerator.
